Dining with Bob is a weekly segment on The Nick Show featuring the Boston University Warren Towers Food Service Director, Robert Frati. Bob began his food service career in 1979 and since then has worked at Brighams, Friendlys, University of New Hampshire, Massachusetts Institute of Technology, Tewksbury State Hospital, and Boston University.

CHOCOLATE CHIP COOKIES

Servings: 12

Ingredients:
1 1/4 oz. margarine
1 1/4 oz. vegetable shortening
1/4 C + 8 1/4 tsp. brown sugar
3/4 oz. whole eggs
1/2 C + 9 tsp. all purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. water
1/2 tsp. vanilla extract
4 oz. chocolate chips

Instructions:

  • Preheat standard oven to 375F and conv. oven to 325F
  • Cream margarine and shortening with sugar until well blended. Add eggs and beat until light and creamy.
  • In a seperate bowl, combine flour with baking soda and salt. Add gradually to egg mixture.
  • Add water and vanilla, mixing to a stiff dough.
  • Reduce mixer speed to low and fold in chocolate chips.
  • Drop portions of dough onto greased pan using a spoon. Allow 2" between cookies
  • Bake in a std. oven for 10-12 min or 8-10 in a conv. oven, until cookies are lightly browned on edges.
  • Immediately remove cookies from pans. Store cookies in airtight container in a cool, dry place.
