Dining with Bob is a weekly segment on The Nick Show featuring the Boston University Warren Towers Food Service Director, Robert Frati. Bob began his food service career in 1979 and since then has worked at Brighams, Friendlys, University of New Hampshire, Massachusetts Institute of Technology, Tewksbury State Hospital, and Boston University.

CONGO BARS

Servings: 48

Ingredients:
3 lbs. 8 oz. brown sugar
1 lbs. 2 oz. margarine
4 oz. molasses
2 Tsp. salt
2 lbs. 8 oz. cake flour
1 lb. 2 oz. whole eggs
1 lb. 2 oz. walnut halves, chopped
1 lb. 4 oz. chocolate drops
1.5 Tsp. vanilla extract

Instructions:

  • Preheat convection oven to 310F; standard oven 360F.
  • Cream brown sugar, margarine, and molasses on high speed for 10 minutes.
  • Add remaining ingredients. Mix well.
  • Pour mixture evenly into each greased sheet pan.
  • Bake in 360F oven for 40-45 minutes.
  • Do not over bake.
  • Cool bars completely before cutting 6x8.
