Ingredients:
12 oz. fresh snow pea
pods, diagonally sliced
6 oz. Spanish yellow onion,
diced
2 T fresh peeled garlic,
minced
6 oz. green scallion,
sliced
2 T gingerroot, peeled
and grated
6 oz. peanut oil
3 lbs. white rice, cooked
1 lb. 2 oz. whole eggs,
beaten
1.5 C soy sauce
1 Tsp. black pepper
Instructions:
- Combine pea pods,
onions, scallions, garlic,
and gingerroot.
- Preheat tilt frying
pan or griddle to 375
F.
- Heat oil, swirl to
coat surface.
- Sauté vegetables
until tender-crisp.
Add rice. Heat through.
- Add eggs. Cook until
eggs are set, but soft.
- Add soy sauce and
pepper. Stir-fry until
mixture is heated through.
Cover. Keep hot for
service.
