Ingredients:
24 7” pizza dough
1 qt. ¼ C pizza
sauce
3 lbs. mozzarella, shredded
Instructions:
- Pre Production
- Place frozen dough
on oiled sheet pans.
Cover with oiled parchment.
Stack dough no more
than 4 high. Wrap in
plastic. Refrigerate
overnight. Proof at
room temperature until
doubled in size.
- Procedure
- Preheat standard oven
to 525F. On clean surface,
dock dough to minimize
blistering during baking.
- Spray pizza screen
with pan release. Place
one dough onto each
pizza screen.
- Top each pizza with:
1.5 oz. sauce and 2
oz. mozzarella.
- Bake in standard oven
for 8-10 min. or until
crust is browned and
cheese is bubbly.
- Repeat for remaining
ingredients.
